As the goal of my blog is to record favorite family recipes. I should be ashamed of myself for not getting around to posting our Cheesy Hash brown Casserole. One of our family favorites for decades has been hash brown casserole. It was often a side dish on holidays, without the ham. Later we added diced ham and made it a one dish meal. Regardless, we absolutely loved it. There were never leftovers when I made this dish. In my 5 years of blogging, I’m ashamed I’ve never posted the casserole!
It’s been over a year since my P.S. has appeared on my blog! He does cook for us occasionally here at the castle but it’s usually a grilled chicken or steak with potatoes and a veg meal. More often he makes us breakfast on Sundays which again is a fairly limited scope of pancakes or his favorite, French toast. This particular morning he made us a meal of breakfast sandwiches and hash browns. We stuffed ourselves! Continue reading
