Is it soup yet?  Just kidding!  It was another cold day up north and coming home to a nice bowl of chunky veggie soup would be so nice.  However, my freezer is fresh out of chunky veggie soup so a dinner of spaghetti and meatballs will have to suffice.  Actually pasta and meatballs are just as comforting as soup.  Comfort food in the form of little balls of goodness. Welcome to today’s episode of “Chopped”! The basket today has four ingredients you must use in some form: cans of whole plum tomatoes (no recipe EVER calls for whole tomatoes!); a pound of leftover meatloaf, a pile of sweet red bell peppers that were on sale and ended up stockpiled in the fridge; and a carton of large curd cottage cheese.  Time to make a meal! I’ve mentioned how my sisters, niece, daughter and I get together for our birthdays and call it a SOTT. We coined it “Sisterhood of the Traveling Tiara” in memory of the movie and a tiara we bought for the birthday gal to wear. The tiara is worn out to lunch or to the coffee shop, wherever the birthday gal has chosen to visit on her special day. We have sequined headbands for the rest of us to wear and boas we’ve been known to wear out in public as well! It’s all in fun and we do get attention at times, dressed up on a Saturday and out on the town! Continue reading
