Soup might not come to mind as a warm weather food but it does at our castle.  I make chicken tortilla soup and we add shredded lettuce, tomatoes, green onions, shredded cheddar and crushed tortilla chips.  It’s like having salad IN your soup!  Or you could think of it as turning a taco salad into a soup.  However you think of it, the flavors are luscious and one loaded bowl will fill your stomach. Fusion cuisine is cuisine that combines elements of different culinary traditions.  This explains my actions when I ‘d planned to have grilled hamburgers for dinner and it rained all day.  My P.S. looked at me like I was crazy when I asked if he’d grill while I held an umbrella.  I seriously wanted a grilled hamburger.  His suggestion was to pan fry them.  Ugh.  Not as interesting, for sure. I’ve had this recipe on my “to make” list for months!  I love to have salads ready as side dishes for grilling season and this one seemed ideal.  It has a little bit of everything that we like.  It seemed odd to have cold ground beef in the salad but when you think of a regular taco salad, the meat isn’t usually very warm anyway.
