Yes, another experiment with baked oatmeal!  I’m loving it baked and have had such success with adding flavors.  This time I imagined a carrot cake oatmeal, using shredded carrots and lots of crushed pineapple.  Although I probably couldn’t work the cream cheese frosting into the baked part, Topping it with a little flavored yogurt might be as good. As the days get cooler up North, I continue to explore new flavors of baked oatmeal. It’s nice to rewarm a bowl of tasty baked oatmeal for breakfast. It’s fast and healthy. I had ripe peaches to use and I imagined some fall spices: cinnamon, nutmeg and ginger. With some finely chopped pecans, I’d make peach cobbler oatmeal. Continue reading

Rhubarb Strawberry Baked Oatmeal

A month ago when I made this oatmeal it was perhaps an unusual breakfast for a warm morning.   But since I bake the oatmeal the night before, it’s good the next day chilled and ready to eat.  Now it’s a reminder to chop and freeze some rhubarb quick, before we have a hard frost.  My inlaws are happy to share their rhubarb and I shared a container of the oatmeal with them.  My father-in-law called to tell me he just loved the fruity flavors and how much they enjoyed the new baked oatmeal.!
