The most interesting dishes are often created from bits and pieces from the fridge that need to be eaten.  I had some lovely asparagus and “pink” oranges and my thought was to make a warm salad.  I could imagine the slightly crispy asparagus coated with an orange sauce and tossed with freshly sliced pieces of orange.  I also had lemon, but the orange flavor was calling to me. This fruit salad came across my monitor from Pinterest. With the orange juice added to the creamy dressing, the fruit salad just HAD to be great. I read Victoria’s recipe on her blog and I gasped out loud (GOL).  Is GOL a thing?  It should be!  But I gasped because the salad had so many of my favorite things, plus it could sit out and be eaten at room temp.  There are not many foods we can do that with and not get sick!  And with the lime zest and juice, the orange segments, it has so many flavors going on it’s bound to be a picnic hit!
