Mediterranean Chopped Salad

My favorite way to eat cauliflower is simply mashed with potatoes and butter.  Close behind would be cauliflower in a salad with black olives, tomatoes and a zesty vinaigrette.  This Mediterranean chopped salad recipe was good but I had to do a few substitutions and tweaks.  I added carrots and subbed orzo for Israeli couscous.  I omitted the feta as I didn’t have any on hand. Braising has become my new favorite food technique.  As much as I swore I’d never use the Dutch ovens my P.S. (Purchaser of Stew ware/ hubby) brought home, I find I like to throw stuff in them and see what results.  I still think Dutch ovens are super heavy to lift down from where they’re stored, and to wash them isn’t pleasant.  But the food coming out of them has been fabulous. My P.S. had brought a rotisserie chicken home one night when he was on his own for dinner.  I used the leftover breast section for chicken lasagna rollups and couldn’t resist throwing the carcass into a pot and making some great bone broth.  For my final installment of “Rotisserie Chicken is our Friend” I made a pot of soup.  I used orzo for a fun touch.  Pasta shaped like rice is just fun.
