Pulled Pork What?

One of our favorite go-to meats is the pork shoulder, also called a pork butt. I’m not sure why that is, it seems they’re opposite locations. But, it’s an inexpensive cut that often goes on sale and is ridiculously easy to throw in the crockpot for several hours, mutilate with two forks and eat for a week. It’s comfort meat. I want to squash some rumors.  Hehe.. just being silly.  This time of year I end up with lots of squash from various sources and have to be creative.  I’ve squashed just about everything I can think of, except the rumors!  This soup recipe came to mind one night when I couldn’t sleep.  I picked up my smart phone and went through Pinterest to find some kind of soup recipe that would fit the two kinds of squash I had already roasted in the fridge. Cheesy Tater Tot Hotdish

We were so happy with the tater tot hotdish I made recently that we wanted more.  My P.S. suggested using cheddar cheese soup instead of the cream of celery and cream of mushroom soups called for in the recipe.  Sounded great to me!  I stopped at the grocery store on the way home and bought the soups.  I’d make it that night for dinner and we’d also have leftovers to microwave during the busy week ahead.
