This past Christmas I tried two new cookies that turned out nothing like the bloggers’ pictures.  I’m not much of a baker regularly, but I do know how to follow directions to the letter.  I did with these pistachio wedding cookies and they didn’t end up in balls.  They should have been like the traditional wedding cookies, balls rolled in powdered sugar, but they ended up more like puffy cookies. I’ve been sitting on a little pile of beets from the farmers market.  I wasn’t trying to hatch them, although if that worked and produced another pile of beets I might consider that…  but I digress.  Beets!  I wanted a cold beet salad that was different and this certainly promised to be both different and delicious.  I was off to make a new form of vegetable and fruit deliciousness. Here’s a flashback to the 70s!  I always loved when my mom made pistachio bundt cake.  Even though I had no idea what a pistachio was until I was about 20, I thought the flavor of that cake was awesome.  Technically “awesome” wasn’t invented yet, that’s a more recent term.  I probably called the cake delicious.  Wait, in the 70s we called it “cool”.
