These cheesy potatoes are a cross between traditional mashed potatoes and the recently trendy “smashed” potatoes. I had a craving for cheesy potatoes but didn’t want to take the time to do an au gratin dish. Ham and Bean Dump Soup

The temperature is down to the 60s and 70s suddenly. From record breaking heat to comfortably cool, it’s fall. Fall doesn’t last long here; winter moves in fast. Snow in October isn’t unusual. Up North we dig out our coats, boots and gloves and shrug. Life goes on, it just takes us longer to get dressed.  We wear layers because it might be 70° during the day but it can drop to 30° as the sun goes down.. Continue reading

Cheesy Hash Brown Casserole

As the goal of my blog is to record favorite family recipes. I should be ashamed of myself for not getting around to posting our Cheesy Hash brown Casserole.  When we discovered the recipe back in the 80s we made it on every holiday.  It wasn’t a holiday if we didn’t have cheesy hash browns on the buffet (we’re buffet people on holidays).  We scraped every last morsel out of that large casserole dish and rarely had leftovers.  This dish was important eatin’!
