I’ve had this recipe on my “to make” list for months!  I love to have salads ready as side dishes for grilling season and this one seemed ideal.  It has a little bit of everything that we like.  It seemed odd to have cold ground beef in the salad but when you think of a regular taco salad, the meat isn’t usually very warm anyway.
