I love making chicken salad with fruit for sandwiches.  Grapes are more of a traditional fruit but I’ve used many others.  The other day I added blackberries and cherries to the chicken salad and wow, was that delicious!  Blackberries tend to be so seedy I avoid them but I was in the mood for a tasty berry and bought some the other day.  The berries really made the chicken salad pop! Chicken salad sandwiches always strike me as being complicated and taking a lot of time to prepare. They really are fairly fast and simple after all. My P.S. (a bread man) brought home pita pockets and I’m always excited to see them.  There are SO many things I like to tuck inside them I almost have to flip a coin.  This time I had some bulk Italian sausage and a whole lot of leftover olives in jars (don’t ask) so a Mediterranean style pita seemed appropriate.  Did I have a recipe?  Of course not!  That wouldn’t be any fun.  Besides, I’d tweak it anyway!
