I’ve been craving chicken burgers.  The simple solution would be to stop at the nearest fast food restaurant (there’s one a block away from the castle) and get myself a chicken burger.  I hadn’t gotten around to doing that when I came across ground chicken in the grocery store.  It was ground thigh meat on code.  I picked up a package that was just over a pound.  I would make my very first chicken burgers. Leftover ham is always welcome in my castle.  It’s so versatile in both hot and cold dishes that it isn’t leftover for long.  It simply depends on my mood at the time.  This day I envisioned the ham in a spread on a Kaiser bun for lunch.  I’d just cut up a fresh pineapple and it was a nice sweet and tart one.  I also had fresh baby spinach on hand that would complete my sandwich. The drafts area of my blog has been piling up as this cold/virus/flu/bug has taken away my will to be productive.  I haven’t even eaten much for almost 4 weeks.  The few things I’ve managed to make and photograph will eventually be posted and all will be right with the world again.  In the meantime I am posting a recipe I made last Sunday for my grandson’s birthday.  Casey is our Halloween child, born on October 31st!
