My P.S. (a bread man) brought home pita pockets and I’m always excited to see them.  There are SO many things I like to tuck inside them I almost have to flip a coin.  This time I had some bulk Italian sausage and a whole lot of leftover olives in jars (don’t ask) so a Mediterranean style pita seemed appropriate.  Did I have a recipe?  Of course not!  That wouldn’t be any fun.  Besides, I’d tweak it anyway! We were joking about sandwiches to accompany the pork and greens crockpot soup I’ve previously posted.  I suggested a chopped Spam salad.  My P.S. was horrified and said Spam should only be served with eggs.  I said “Challenge accepted, I can make egg salad with Spam!”  I got the PHE (patented husband eyeroll).  But it’s a great idea to use up any extra Easter eggs you might soon have in the fridge! We’ve eaten quite a few subs in the last few months.  They’re quick to make or easy to pick up at Subway’s drive-thru (guilty look).  I recently posted the Subizza subs I made for the grandkids that were such a hit.  Last week my sub tendencies shifted in a fajita direction.  I had chicken breasts and Julie’s fajita seasoning recipe and I was determined to make a sub that even Subway would envy!
