I’d been wanting to revisit a post I did 6 years ago (6 years!) that transformed cauliflower into shrimp. It was so good I just couldn’t get over how much it actually tasted like shrimp.  I used almost the same recipe to boil raw shrimp for many years and this was a cheaper way to enjoy the same flavors.  It was time to enjoy it again while cauliflower was in season. This jambalaya recipe was created by  combining a jambalaya recipe from my dear, late friend Wanda and a jambalaya recipe from my favorite (unfairly cancelled) show, The Chew.  The recipes are both from New Orleans residents, both with a Creole influence.  The Creole version contains tomatoes.  I can’t imagine jambalaya without tomatoes and have always included them. Remember when you were a kid and did strange things with your food at the dinner table?  Like make a mountain of mashed potatoes in the center and a moat of gravy with green peas sprinkled around like trees?  I should have become a food stylist.  I have continue to do fun things with the food I’m serving through the years.  The kids enjoyed meatloaf volcanos or carved watermelon beasts spewing watermelon chunks.  One year a pumpkin monster vomited out guacamole.
