The question was raised: can we substitute almond milk for the usual milk when making an egg bake?  When my P.S. (Princely Spouse with mild lactose intolerance) said he was giving up egg bakes because of intestinal issues, I was devastated.  I love to make them and have pieces on hand in the freezer for quick breakfasts!  I couldn’t make them just for myself! We haven’t had an egg bake in several months.  My P.S. was asking (begging) for a big pan of egg bake to eat for breakfast for a few mornings.  I wanted one that was like an everything omelet: ham, broccoli, tomatoes onions, hash browns and lots of cheese.  I like them made with rustic, crusty bread and when P.S. brought a loaf home, breakfast was ready to happen. We’re going to make an egg bake today that is another result of working my way through a freezer full of interesting frozen things.  If I ever get to the back, we may find Jimmy Hoffa.  Hopefully that will be a long way off; there are a whole lot of frozen foods between us and the back wall.  Today we are using a chunk of corned beef I made a few months ago in the crockpot.
