It was a “ bunch of chopped bits” kind of evening meal. I had planned to make taco salad for dinner and make a fresh fruit salad as a side dish. Wow was that was a lot of cleaning and chopping! Tongue Tacos by Roger
I’d like to share another recipe from my adventurous brother, Roger. I posted his experiences with chitterlings awhile back. I’m not as brave as Roger- on one adventure he ate bugs. (I didn’t ask for that recipe) I do admire his sense of fun in exploring unusual foods though. He recently sent me the pictures and directions for making tongue tacos using a good-sized beef tongue, a slow cooker and a generous handful of seasonings. Fish Tacos with Mango Salad
When I make fish tacos I’ve usually breaded and fried the fish pieces. I ran across a recipe that marinated the fish and then sprinkled paprika on the pieces before frying. I was interested to try it because I’d been looking for a mango and cucumber salad to put in the fish tacos. The same post I found had a mango salsa that sounded like I could sub in some cucumber and so I was ready to try them. Continue reading
