Braising has become my new favorite food technique.  As much as I swore I’d never use the Dutch ovens my P.S. (Purchaser of Stew ware/ hubby) brought home, I find I like to throw stuff in them and see what results.  I still think Dutch ovens are super heavy to lift down from where they’re stored, and to wash them isn’t pleasant.  But the food coming out of them has been fabulous. I love Swiss steak.  It reminds me of back when my Mom made it in our big electric frying pan.  I don’t think crockpots were invented yet.  But she  made a big batch of Swiss steak in that frying pan on the counter and I loved the gravy.  I wasn’t a big meat-eater even back then; I was all about the gravy and mashed potatoes.  Weight problem?  Um, yes.  I did eat most vegetables, in my defense. Beet Greens and Bacon Stir Fry

This is one of my favorite fresh vegetable concoctions.  I threw together several fresh seasonal vegetables with bacon, added cheese and it was delicious.  Sometimes I just have to wing it and surprise myself.  Hopefully the result will turn out tasty, but we’re not fussy.  We like our vegetables.  My P.S. is the one who prefers some kind of meat with the veggies.
