I had a pound of ground beef to use up and my craving hit: I wanted lasagna.  I wanted a cheesy piece of lasagna Bolognese with slices of zucchini.  I didn’t want to use zucchini as the noodles, they’d be extra texture.  I was going to use Mafalda.  I like to make lasagna soup using Mafalda so making a pan of lasagna with the smaller noodles would be a fun change. Grilled Corn Cowboy Caviar

We get cravings for what they call ‘cowboy caviar’ here at the castle.  It’s so full of flavor with the multitude of ingredients.  I notice a different ingredient in each bite.  And I’m picky about the chips I use to dip.  I like the smaller round white corn chips.  I don’t like having to struggle to get the loaded chip into my mouth without spilling.  It was time to make a jumbo batch. Rotisserie Chicken Tortilla Soup

Soup might not come to mind as a warm weather food but it does at our castle.  I make chicken tortilla soup and we add shredded lettuce, tomatoes, green onions, shredded cheddar and crushed tortilla chips.  It’s like having salad IN your soup!  Or you could think of it as turning a taco salad into a soup.  However you think of it, the flavors are luscious and one loaded bowl will fill your stomach.
