Turkey, Broccoli Stuffing Hotdish

Instead of all of the traditional dishes and side dishes for our Christmas buffet I tried quite a few new ones.  We celebrated the holiday on Christmas Day instead of Christmas Eve.  I had an extra day to prepare foods ahead of time and that was a relief.  We had several frozen turkeys in the freezer and I wanted to use one for a cozy casserole-type dish.  It would be traditional in an informal way.

We made two turkeys for Thanksgiving this year. The whole family was gathering at my sister’s and we do love our turkey! That’s a lot of carcass to make bone broth from afterwards and I was happy. Instead of the nice big pot of turkey wild rice soup I usually make, I was going to divide the freshly made turkey bone broth into 3 different soups. Soup heaven! Continue reading

I have a lot of ground turkey. Apparently my P.S. (Poultry Supplier/ hubby) buys it regularly and stores it in the basement freezer. When we cleaned it recently we were appalled to see how much was hiding in the freezer’s depths. We need to start eating more turkey!
